Apple sauce / apple compote with cinnamon & vanilla

Homemade apple sauce or a chunky compote, flavoured with cinnamon, vanilla and lemon. Delicious served warm with vanilla ice cream or porridge.

Ingredients

  • 800 g peeled apples
  • 50 ml granulated sugar
  • ½ tsp ground cinnamon
  • 1 tsp vanilla sugar
  • 2 tsp lemon juice
  • 100 ml water
  • A small pinch of salt

Lovely served warm with vanilla ice cream or porridge.

Method

  1. Core the apples and cut them into small pieces.
  2. Put the apples in a saucepan with the water and lemon juice.
  3. Simmer gently with the lid on for about 10–15 minutes, until the apples are soft.
  4. Add the sugar, cinnamon, vanilla sugar and, if desired, a small pinch of salt.
  5. Simmer for another 2–3 minutes.
  6. For compote, stir gently so that some apple pieces remain. For apple sauce, mash with a potato masher or blend carefully with a stick blender.
  7. Taste and add a little more sugar if you prefer it sweeter.
